Savoy Emmental:
Our Savoy Emmental is the oldest of the French Emmentals. There is evidence of its production in the mountain pastures as early as the Middle Ages.
Made exclusively from raw milk , it is produced in small craftsman diaries , which distinguishes it from large-scale industrial cheese production. Its characteristic holes appear during the maturing process which lasts more than 10 weeks. Its fruity taste makes it the most characteristic of French Emmentals.
Did you know : It takes 900 to 1,200 litres of milk to make a round of Emmental.
Savoy Tomme:
Rooted in the history of the Duchy of Savoy, the Savoy Tomme is the oldest cheese.
Made exclusively from cow’s milk, its rind takes on a pigmented grey , yellow or red. The cheese is white to pale yellow.
Each Savoy Tomme is identified by a casein seal which guarantees its origin and traceability , red for dairy Tomme, green for farm Tomme.
Do you know the famous Magland sausage ?
Magland Sausage
This pure pork sausage is made by craftsmen with rigorously selected lean ham, pork shoulder and fat (around 17% fat).Neither colouring nor preservative is used. It is chopped very roughly and smoked in high chimneys called « la boerne », with beech wood and conifer sawdust. Its exceptional quality and characteristic flavour have made it into a noted gastronomic product, mentioned in several good food guides. It is eaten dry as a starter or with other cooked pork meats and makes an excellent accompaniment to fondue or raclette.
Sparkling Wine
This is a sparkling wine, made by the Champagne method , (traditional method) produced as extra dry or dry and sold two years after its year of production. It is a noble wine, bubbly and with an aroma of violets, white peach and jasmine. It has a most refreshing lemony side and a final taste of brioche.
It makes a lovely accompaniment to every occasion whether as an ‘aperitif’ or dessert wine and- why not ? – all through the meal for longer-lasting pleasure!
Still Wine
This is a white wine with appellation d’origine contrôlée, which, as its name suggests, is a traditional Savoy wine , with , as always, the extra character that comes from the Gringet , (white flower and sweet almond). It will go well with all your usual menus: fish, seafood and the traditional Savoyard fondue.
